My eyes scanned the glass door and there, I saw the word “coconut.” I automatically envisioned myself frolicking along a tropical island surrounded by pristine crystal clear water and possibly a Pina Colada, or two, in hand. Coconut- yes, take me there. Snapping back to reality, my vision focused on the carton of milk staring at me from behind the glass door- coconut milk. Curiosity got the best of me as I opened the glass door, removed the carton from the shelf, read the nutrition label, placed it in by shopping cart and proceeded to the cashier.

The anticipation of wanting to try the coconut milk had built up all throughout the car ride from the supermarket to my home. I know, it’s the little things that excite me. Alas, the moment was finally here! I watched as the opaque white liquid flowed from the carton and splashed against the ice cubes waiting at the bottom of my glass. My newfound obsession with coconut milk inspired me to do some research about the benefits of coconut milk. I was delighted at the health and beauty benefits I found:

  • Coconut milk helps regulate blood sugar

The high magnesium content aids in glucose metabolism and helps the absorption of important vitamins and minerals our bodies need.

Coconut milk is rich in Lauric acid. According to livestrong.com, Lauric acid is a “healthier” saturated fat that helps reduce plaque from collecting along the arterial walls.

  • Keeps you looking young

The Vitamin C and Copper found in Coconut milk helps to prevent wrinkles by restoring skin elasticity and flexibility; thus slowing down the aging process!

  • Hair Therapy

Coconut milk is a natural hair conditioner that works wonders on our manes. This hair elixir contains the necessary nourishments to add shine, hydrate and strengthen our hair!

Coconut, Strawberry, Banana Smoothie

1 cup of strawberries

1 banana

1 cup coconut milk

4 ice cubes (or as needed)

1 teaspoon coconut extract

1 teaspoon of honey or agave to sweeten it to your taste

Combine all ingredients in a blender and enjoy!
