No-Cook Dinner Meals

No-Cook Dinner Meals

Raise your hands if you’re a no-cook kind of gal. It’s always quite funny when I tell people that my husband does most of the cooking, but hey, I’m learning so don’t judge me!

In the meantime, if you’re not a fan of hot oil splatters or oven mitts, there are some no-fuss, no-stove dinner options that are still ridiculously delicious. Plus, who really wants to be slaving over a hot stove with the rising temperature?

These options are easy to make, healthy to consume, require little preparation time, and will leave you feeling just as full as hubby’s five-course meal. (What a show off)

1) Tuna Lettuce Wraps


What you’ll need:

  • Tuna
  • Feta cheese
  • Olives
  • Bell peppers
  • Chickpeas
  • Tomatoes
  • Virgin olive oil
  • Sea salt
  • Red onion
  • One lemon juiced
  • Iceberg lettuce

What to do:

  • Stir together tuna, cheese, bell peppers, red onion, chickpeas, lemon juice, olive oil, and sea salt all together in one large mixing bowl.
  • Add tomatoes in with the mixture
  • Place a scoop of the mixture into a large piece of lettuce and wrap up and that’s it!

2) Caprese stuffed avocado


What you’ll need:

  • Two avocados (pitted)
  • ½ cup Cherry tomatoes (halved)
  • ½ cup mini marinated mozzarella balls (halved)
  • Balsamic vinegar
  • Virgin olive oil
  • Kosher salt
  • Black pepper

What to do:

  • Scoop out both avocados leaving just a small border, then dice avocados and put aside.
  • Toss together diced avocado, mozzarella, balsamic, and olive oil together in a bowl and season with salt and pepper.
  • Place the salad mixture into the avocado halves and garnish with basil.

3) Black Bean Salad


What you’ll need:

  • ½ avocado
  • ¾ fresh cilantro
  • ½ cup nonfat plain yogurt
  • 1 clove chopped garlic
  • 2 chopped scallions
  • 1 tablespoon lime juice
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • 3 cups mixed greens
  • ½ cup black beans (cooked or can)
  • ½ cup corn kernels
  • ½ grape tomatoes

What to do:

  • Put avocado, cilantro, yogurt, scallions, lime juice, sugar, and salt in a blender and blend until smooth.
  • Place greens in a salad bowl and toss together with two tablespoons of dressing. Top the greens with black beans, corn, and tomatoes, and dinner is served!

4) Apple and Chickpea salad wrap


What you’ll need:

  • ½ diced apple
  • ½ cup rinsed garbanzo beans
  • One hard-boiled egg diced
  • Kosher salt
  • Black pepper
  • ½ tablespoon of balsamic vinegar
  • One tablespoon virgin olive oil
  • Two flour tortillas

What to do:

  • Combine all the salad ingredients in one mixing bowl, then mix together the oil and balsamic vinegar with a pinch of salt and pepper.
  • Sprinkle this all over the salad and toss to ensure that the entire mixture is coated
  • Pile about half of the salad in the middle of a tortilla and fold the side flaps inward followed by rolling it up like a burrito.

Dinner is served, enjoy!
