Winter Storm Emergency Bean Salad

Extreme winter storms can cause major disruption to electrical power, so with that in mind I thought I would post my famous South African bean salad that serves me well during hurricane season in Florida.  It is easy and so delicious in any emergency.  Also, you may already have most of the ingredients in your kitchen cupboard, if not, buy double and store for the next storm.

Ingredients

1/3 cup olive oil

1/3 cup sugar

1/3 cup vinegar

1 tsp salt

4 tsp basil

1 can vegetarian baked beans in tomato

1 can French cut string beans (drained)

1 can butter beans (drained)

1 can red beans (drained)

1 onion chopped

Method

In a pot on top of the stove, heat the olive oil, sugar and vinegar until the sugar melts. Turn heat off and stir in the rest of the ingredients until all mixed. Place in serving bowl and voila! – you have an instant dish.  It can be served as is or with another meal or on toast – please let me know if this was something you enjoyed.
