Start your salad off with some greens: spinach, arugula, or some leftover veggies from the night before make for a great base. You can even toss in a little apple cider vinegar or lemon juice to increase the body’s ability to absorb the greens.

The next layer of your breakfast salad can of course be an egg. A poached or sunny side up egg makes a great source of protein for your mornings.

You can even add some avocados, nuts, or pre-cooked beans to make sure you stay full for longer, while also packing in more protein.
