My Famous Chocolate Cake

In honor of chocolate day, I thought I would share with you my delicious and oh so easy chocolate cake that is simply too scrumptious not to attempt.


5 ½ oz organic flour

3 ½ oz cocoa powder

1 tsp baking soda

9 oz extra fine sugar

9 fluid oz buttermilk

2 eggs

4 ½ oz unsalted butter, softened

4 oz flaked almonds, toasted

Some powdered sugar to sprinkle on top of cake


Preheat the oven to 350 F. Grease a deep 8 inch round cake tin with butter and then line the base with baking paper.

Sift the flour, cocoa and baking soda into a large mixing bowl. Stir in the sugar.

In another bowl, whisk the buttermilk, eggs and softened butter and then add the dry ingredients. Beat with an electric whisk on slow speed for 3 minutes, until just combined, then increase the speed to high and beat for 3 minutes more, until the mixture is free of lumps and the volume is increased. Pour into the prepared tin and smooth the top.

Bake for 40 – 50 minutes, or until a skewer inserted into the center of the cake comes out clean. Remove from the oven and leave in the tin for 15 minutes before turning onto a plate to cool completely. Once cool, sift powdered sugar on top and add the toasted almonds.
