Salty and Sweet Potato Fries

This one is a no-brainer. Simply cut your potato into strands sized according to your preference. Sprinkle them with coconut oil, top them with sea salt and cinnamon and bake at 450 degrees until golden brown.

Sweet Potato and Onion Spinach Quesadillas

Microwave sweet potatoes for 15 minutes and grill onions separately. Cut potatoes open, remove “meat” and combine with onions and desired spices. Add mixture to tortillas then add to a skillet at medium high heat. Cook on both sides (approx. 2-3 mins) until crisp.

Sweet Potato Chips

Cut potatoes into thin slices and toss with desired amount of olive oil, salt, chipotle or chili powder and cumin. Place in over at 425 degrees and roast for 40 minutes turning once after 20 minutes. Dip in your desired dressing.
